I’ve been bad at blogging. Again. So, I’m sorry. Maybe now that I’m 3 months into my dual-jobs, I’ll feel more adjusted and get back into the swing of baking & blogging, together.
Here’s the thing: if/when I find myself free time, I’d rather bake. So, when I do get that free hour here and there, I bake, and I bake, and the blogging piles up and all of a sudden I’ve baked so many things and haven’t had the chance to tell you about any of them.
Except I can’t not tell you about this strawberry tart. Isn’t she a showstopper?! And easy! Seriously – so easy. All you need is a pie crust (I made my own, but the pre-made stuff from Pillsbury is just fine), white chocolate, heavy cream, and strawberries. Pre-bake the crust using pie weights or baking beans. Then, in a small bowl, weigh 6 oz of white chocolate and pour 4 oz of heavy cream over the chocolate. Let it sit for 30 seconds, then start whisking from the center to emulsify the ganache. Pour it into the tart, let it set for a few hours or overnight, and then decorate with strawberries, or whatever fruit you like.
